7-UP Biscuits You Must Try

OMG, you just have to try these.  They are so quick and easy and only 4 ingredients.  I stumbled across these on Pinterest yesterday, thanks to Plain Chicken, her blog is full of yummy stuff.  I made these with dinner last night and between 3 of us, they were all gobbled up!
When I make these again, which I will, I will be making a double, possibly triple recipe.


7-UP Biscuits

2 C Bisquick
1/2 C sour cream
1/2 C 7-UP
1/4 C melted butter

Cut sour cream into Bisquick mix, add 7-UP.  Makes a very soft dough. 
Sprinkle additional Bisquick mix onto countertop and pat dough out. Cut into squares
Melt 1/4 C butter in a 9" square pan.
Place cut biscuits into pan and bake at 450 degrees for about 10-12 minutes or until golden brown.

Mailbox Overload!

Did everyone have a great Thanksgiving weekend?  My family was fortunate to share the weekend with my sister and her kids from Arizona.  They flew in last Wednesday and just left yesterday.  I miss them already.

Last Saturday, I went to the post office to pick up my mail (I have a Post Office box address). I had a big purple card in my box saying "Mailbox Overload", please come to the counter to pick up your mail.  I didn't want to wait in line on Saturday, as our post office always has at least 15 people in line and you have to plan on waiting at least 30 minutes to get waited on. I picked up my mail yesterday, and wowza, it was full of freebies and samples I had ordered from many different places.

I had a full package of Coricidin HBP to try and share thanks to BzzAgent.com. I love this site, you take surveys and are picked if you are good match to try and sample various products and share your reviews via Facebook, Twitter etc.

Another great sample I received was from Airborne Immune System.  I got 4 different samples.  You can go to Airborne Health website and request your free samples.

Also, if you join Naturally Savvy, they will send you free samples of their products to try and share you.r opinions.  In this sample pack I received a sample of Bio-K Plus capsules, it is a probiotic for regular intenstinal functions.  A sample of All Natural Pamela's Baking & Pancake mix.  A free sample of Re-Body SafSlim, a belly fat supplement with clinically researched ingredients.  A sample of Ecover, natural dishwashing liquid, a huge sample, 3.3 oz.  Also received a sample of Blue Diamond Almonds, Baked Nut Chips, Sea Salt flavor.  Can't wait to try these! Thru the Walmart website, got a sample of Eucerin Smoothing Repair Lotion and from Target, a free sample of Dream Fresh BB Skin Perfector foundation in light/medium sheer tint.

Last post was about my Spinach Squares, yes, I ate most of them. I just love them. With Thanksgiving next week already, and Christmas right around the corner, I thought I'd share another favorite holiday recipe.

Scalloped Corn

4 cans cream Corn
1 can whole kernel Corn
4 eggs, beaten
1/2 sleeve saltine crackers (and a few more for topping)
1/3 C. milk
salt and pepper to taste




Pour into 9x13 pan and top with a few crushed crackers. Bake 300-350 degrees (depending on your oven) uncovered for 1 1/2 hours. Feeds at least 8 to 10 people or more if lots of children.  This truly is a favorite.

Spinach Cheese Squares

And for all of you spinach lovers, here is an awesome Spinach Cheese Squares Recipe.
This is an excellent appetizer recipe for the upcoming holiday events.
I just made a pan yesterday, and thanks to me, they are about 1/2 gone.  This recipe is kind of a comfort food type recipe for me.  They can be reheated or eaten at room temperature.



Spinach Cheese Squares

16 oz cottage cheese 
2 large eggs
4 egg whites
1/4 C. chopped green onions (I use about 5 stalks)
2 oz shredded cheese (cheddar or I use Mexican blend)
3 TBSP melted butter
1 TBSP all purpose flour
1/2 tsp salt
1/2 tsp minced garlic (I use garlic powder)
1/4 tsp black pepper (I use a little more)
1/8 tsp red pepper flakes
20 oz frozen spinach (2 boxes) - thawed under cold water
1 oz Parmesan cheese

Preheat oven to 350 degrees.  Lightly spray a 9" square pan (for thicker squares) or a 9"x13" pan (for thinner squares).  I like to use the bigger pan so I get more squares from it.

In large bowl, mix together the cottage cheese, eggs, egg whites and green onion until well blended. Mix in shredded cheese, melted butter, flour, salt, garlic, black pepper and red pepper flakes until thoroughly combined. 

Pour mixture into pan, sprinkle with Parmesan cheese.

Bake approx. 45 to 55 minutes, depending on pan size. 55 minutes for 9" square pan, maybe 45 minutes for the 9"x13" pan. Bake until top is golden brown. Let cool to room temperature. Cut into squares. Serve at room temperature or warm.

This squares can be made ahead of time and refrigerated or frozen and reheated in the oven before serving.

Makes 30 small squares for appetizers or 6 large squares for breakfast or brunch.  And they are yummy.

'Tis The Season for Canning Vegetables

Good Monday Morning,

Now is the time of season, when you try to extend the life of your vegetable garden.  Freezing and canning are one of my favorite things to do with the fresh produce from the garden. You are also preserving fresh vegetables, and not worrying about pesticides you may find on store bought produce.  Very eco-friendly way of eating.

I love to can salsa.  I make both the boiling salsa method as well as the chopped and jarred.  The later only lasts around a week or so.  Make sure you have plenty of tomatoes.  I used to grow jalapenos, habaneros and banana peppers and don't forget the chopped onions.  Delicious!

Canning sweet corn is another favorite of mine.  My boys' great grandmother used to freeze the best sweet corn ever.  She would blanch the sweet corn, cut from cob and add sugar and salt before placing it in quart size ziplock bags.  This was excellent in a crockpot for holiday get togethers.

I once tried to freeze habanero and jalapeno peppers so I could use them at a later time, but they turned out pretty mushy.  I will need to find a better way to freeze these.  I know you can pickle them, but then you loose the natural flavor of the peppers.
